· 3 cups Homemade Baking Mix
· 1 tablespoon brown sugar
· 1 tablespoon Splenda
· 1/2 cup water
· 1/2 cup milk
· 1 egg
· 1 teaspoon vanilla
Preheat
oven to 425 degrees. Blend wet ingredients in one bowl and dry ingredients in another. Stir wet ingredients into dry just
to moisten.
Spoon
batter into greased or paper-lined muffin cups and bake about 12-15 minutes or until browned.
Add spices
like 1/2 tsp. cinnamon, or 1/4 tsp. nutmeg if desired. You can blend 1/2 cup oatmeal, 1/4 cup flour, 3 tablespoons brown sugar
and add 3 tablespoons melted butter to make a streusel topper and sprinkle on top.
Or add
spices and press about 1 teaspoon apricot or other jam into batter before baking. Makes 12 muffins.
