Scottish Shortbread Cookies
¼ cup confectioner’s
sugar
¼ cup granulated sugar
1¼ cup butter cut into 8
or 10 squares
2½ cups flour
Place sugars in food processor
and blend until very fine. Add butter. Pulse until sugar disappears. Add flour. Pulse until all flour is dampened. Put in
a plastic bag and knead until it holds together. Remove from bag and shape into 1” balls. Place on unbuttered cookie
sheet 2” apart. Flatten with the bottom of a glass or cookie press. Bake 15 minutes at 350◦ until pale gold. Cool.
