Zuchinni Apple Pie

 

1 cup sugar

2 tbsp flour

1 tsp cinnamon

1/2 tsp salt

1 tbsp apple juice

2 tbsp butter

5 cups peeled, seeded, sliced zuchinni

double crust pie shell

1 tbsp milk

 

Boil all the ingredients except the zuchinni and crust. Use a LARGE peeled zuchinni. Cut it in half lengthwise. Scoop out the seeds and discard. Slice the halves crossways so that the slices look like apple slices. Arrange in pie crust. Pour sauce over slices. Put on top crust. Brush top crust with milk.

 

Cut vents in top crust in shape of flowers or other design. Bake at 350for about 45 minutes or until golden brown. I put a cookie sheet under the pie plate so that if the juices bubble out it doesn’t get on the bottom of the oven. This pie is very hard to tell apart from an apple pie.
