Lemon Meringue Pie

 

1 ¼ cup sugar

1/8 tsp salt

4 egg yolks

1 tsp butter

1 ½ cup water

1/3 cup flour

juice of 2 lemons

1 baked 9” pie shell

 

4 egg whites

6 to 8 tbsp sugar

dash salt

1/3 tsp cream of tarter

 

Mix all ingredients up through flour in sauce pan. Beat to make creamy yellow color. Bring to a boil. When it is thick, add lemon juice. Pour hot pudding into 9” pie crust. Let cool.

 

Make meringue by beating egg whites and cream of tarter until stiff. Continue beating while slowly adding sugar and salt. Dollop on top of lemon pie filling. Bake at 400about 1 minute or until peaks turn golden brown. Careful, this will burn very easily.
