Jim's Mint Pesto

1 cup fresh mint leaves,
1 cup walnuts
1/2 cup feta cheese
1/2 cup olive oil
lime juice and salt to taste
 
Mix in blender, adding oil gradually until texture looks right. Add a little lime juice and salt to taste. WONDERFUL on scrambled eggs.

This recipe comes from James Magruder, my eldest son, who loves to use wild foods.  Mint is often found growing along streambanks.
