(cheese potatoes)
2 cups water
1 tsp salt
10 small new potatoes
6 hard cooked eggs sliced
2 green onions, chopped
2 oz diced pimento, if desired
1 can cream of chicken soup
1/2 cup milk
1 clove garlic, minced
1/2 tsp onion salt
1/8 tsp pepper
1 cup cheddar cheese, grated
4 slices bacon, fried and crumbled
Boil the potatoes in the water with salt. Drain and cool. Cut potatoes into fourths after removing
skins. Heat oven to 375'. Layer potatoes, eggs, onions, and pimentos in ungreased casserole. Mix soup, milk,
garlic, onion salt, and pepper. Pour over the potatoes and top with cheese and green onion. Bake 25 minutes uncovered.
