My Favorite Fruit Cake


 

 

1/2 lb nuts

1/2 lb dates

1/2 lb raisins

1 lb citron

2 cups candied cherries

1/2 cup oat or wheat bran

2 cups flour

2 tsp baking powder

1/4 tsp baking soda

2 eggs

1/4 tsp cloves

1/4 tsp ginger

1 tsp cinnamon

1/2 cup molasses

1/4 cup sugar

1/2 tsp salt

1 6 oz can orange juice concentrate

1/2 cup olive oil

1/2 cup sour milk

 

Mix fruit, nuts, and flour. Add other dry ingredients. Mix liquids and then add to dry ingredients. Mix enough to moisten. Bake in greased, paper lined loaf pans at 300 for about 1 hour 15 minutes. Cool.

Remove from pans. Put in zipper bags. Refrigerate for one or two days and then put about 2tbsp of fruit juice in each bag. Reseal and refrigerate another day or two. If still dry, add more juice. This is best if stored in fridge for 2 weeks or more. Then slice and serve. It is mostly fruit and nuts. Very little cake.
