2 ¼ cups
flour
1 tsp
each baking soda and salt
2 tsp
cinnamon
2 cups
sugar
1½ cup
oil
3 eggs
2 cups
grated carrot
1 tsp
vanilla
1 cup
each drained chopped pineapple,
walnuts,
and coconut
Optional
add 1 cup raisins.
Mix all
ingredients. Bake at 350◦ 1 hour in 13 x 9 pan greased and floured.
