Rhubarb Dumplings
Sweet
Dumpling Dough:
2 cups
flour
1/2 tsp
baking soda
1/2 tsp
baking powder
1/2 tsp
salt
1 cup
buttermilk
1 tbsp
buttermilk
1 tbsp
olive oil
1/4 cup
sugar
1/8 tsp
cinnamon
Sift
together all dry ingredients. Add the liquids. Mix into a dough.
Sauce:
11/2
cups fresh rhubarb
2 cups
of water
2 cups
sugar
dash
of salt
Boil
rhubarb in water until it is tender. Add sugar and salt. Bring back to a boil. Reduce heat to a simmer. Drop dumpling dough
by tbsp into boiling rhubarb. Simmer about 10 minutes. Serve each dumpling with some of the sauce and some vanilla ice cream.
