This cake was something that I created to make sure my son and his friends had a good after school snack while they did their homework.  In creating it, the "trial and error" batches went to our family dog.  After that, when he could smell this cooking he would stand at the patio door whining and drooling until he was given a serving.  I now make it with barley flour because of gluten issues with wheat flour and it is still just as good.  I have also substituted buttermilk for the sour cream and it was just as good.  A very easy treat to make and share!
 
Preheat oven to 350º
 
BASE:
2 cups       all-purpose flour or barley flour
2 cups       brown sugar - packed
1 cube      butter or margarine - melted
1 cup        chopped walnuts or pecans
2/3 cup    oatmeal - not instant
 
Mix together flour, sugar and butter into a "crumb" .  Then fold in the nuts and oatmeal.   Press 2 3/4 cups of this into the bottom of a 9 x 13 pan that is ungreased.  Press down well so you don't have any gaps.  Don't take it up the edge at all.  I use a spatula to make sure it is uniform depth.
 
To the rest of the Base add:
1 tsp           baking soda
1/2 tsp       salt
1 1/2 tsp    cinnamon
1/2 tsp       nutmeg
1 cup          sour cream
2 lg            eggs - beaten lightly
3 cups        fine chopped apples* that have been peeled -
*I like Braeburn or Gala but any will work just fine
 
Mix this well and spread over the top of the base and bake at 350º for 45 minutes.  Top will spring back when it is done. 
 
Cool on a wire rack and cut when barely warm. 
 
We cut it into 20 pieces (each are about 2 x 2 sort of (4 cuts by 5 or 6 if you are stretching it) and I put it into muffin papers on a tray.  Serve with ice cream, or whipping topping.  No frosting, so it is pretty easy to keep.  It freezes OK, but usually kept in the fridge for snacking.  It makes a great breakfast snack that is more healthy than the sugary cereals.
