Chocolate Eclairs
½ cup butter
1 cup
water
1 cup
flour
¼ tsp
salt
4 eggs
Bring
water, salt and butter to a boil. Add flour and remove from heat. Stir until the mixtures comes clean from the sides of the
pan. Add eggs one at a time stirring in before you add more. Spoon dough onto
a greased cookie sheet. Dough should be about 4” long and 1½ ” wide.
Bake at 450◦ for 15 minutes. Reduce heat to 325◦ and bake an additional 20 minutes. Cool completely on a wire rack. Carefully
slice in half.
