Tapioca Pudding, Snowflake Pudding, Chocolate Pudding, Rice Pudding, Flan

Tapioca Pudding

 

3 tbsp tapioca

1/8 tsp salt

3 tbsp sugar

2 cups milk

2 egg yolks

 

Beat egg yolks. Add remaining ingredients. Mix and let stand 5 minutes.

 

2 tbsp sugar

2 egg whites

1/4 tsp vanilla

 

Beat egg whites stiff, add sugar and vanilla.

Cook tapioca mixture over medium heat until thick. 6-8 minutes. Fold in egg white mixture.  Serve warm or chilled.

 

Chocolate Pudding

 

1 can sweetened condensed milk

1/4 tsp salt

2 cups water

3 sq bakers chocolate

3 tbsp corn starch

1 tsp vanilla

 

In double boiler combine milk, salt and 1 /2 cups water. Add chocolate. Heat until chocolate melts. Stir in remaining ingredients. Cook until thick. Serve hot or cold.

 

Grandma Faye’s Rice Pudding

Mom gave me this recipe when we lived in Dayton. We had a cow and so lots of fresh milk and cream.

 

2 1/2 cups cooked rice

2 eggs

1/2 cup sugar

2 1/4 cups milk

1/4 tsp salt

3/4 cup raisins

1 tsp vanilla

1/4 tsp cinnamon

1/4 tsp nutmeg

 

Beat eggs. Add other ingredients. Bake in a 13x9 buttered pan at 350 for about 40 minutes. The last 10 minutes of cooking, lift the edges of the pudding with a fork to allow the center to cook. Let cool.

 

Creamy Rice Pudding

 

½ cup uncooked rice

3 cups water

1½ tsp salt

1 can sweetened condensed milk

½ cup raisins

2 beaten eggs

1 tsp vanilla

dash of nutmeg

 

Cook the rice in the 3 cups of water with the salt. Add the remaining ingredients except the vanilla and nutmeg until the mixture coats a metal spoon. Remove from heat and add vanilla and nutmeg. Put in custard cups and cool. Edit Text

Gave Griffeth’s Snowflake Pudding

 

1 cup sugar

½ tsp salt

1 cup milk

1 envelope unflavored gelatin in 1/4 cup water

1 tbsp vanilla

1/3 cup coconut

1 cups heavy cream whipped

 

Mix sugar, salt and milk. Heat until sugar dissolves. Add softened gelatin. Stir until dissolved. Chill with a lid on in the fridge until softly set up. Add vanilla, coconut, and fold in whipped cream. Put in a jello mold oiled with vegetable oil. Chill until very firm. Unmold and serve with raspberry sauce.

 

Raspberry Sauce:

 

1 pkg raspberry danish dessert mix

1 pkg frozen raspberries with juice

 

Use the recipe on the danish dessert mix box. Add the frozen raspberries and juice.

 

Flan

 

2 pkg cream cheese

1 can sweetened condensed milk

4 eggs

2 tsp vanilla

1/4 cup brown sugar

 

Mix all but sugar and bake in buttered pie plate or custard dish. When just set (knife inserted comes out clean) sprinkle brown sugar on top and bake about 10 more minutes. Chill and serve.
