Grandpa Jim's Favorite Tomato Preserves

3 lbs fully ripe tomatoes

2 tbsp lemon juice

1 box mcp pectin

5 cups sugar

 

Puree tomatoes. Simmer until you have 3 cups. Add lemon, pectin, and sugar. Mix. Bring to a hard rolling boil and boil for 3 minutes. Put in sterile jars and process in boiling water bath for 20 minutes. Makes 6 half pints.
