Sweet Lime Pickles

7 lbs sliced cucumbers

2 cups pickling lime

2 gallons water

 

Soak cucumbers in lime water for 12 hours in stainless steel kettle. Do not use aluminum. Drain. Wash 3 times in clean clear water. 

 

8 cups vinegar

8 cups sugar

1 tbsp salt

2 tsp mixed pickling spice (below or use

commercial type)

 

Mix until sugar is dissolved.  Add the cucumbers to this mixture and boil for 35 minutes. Fill sterile jars. Process in boiling water bath for 10 minutes.

 

Pickling Spice

 

3/4 tsp mustard seed

3/4 tsp celery seed

1/4 tsp minced dry garlic

1/4 tsp dill seed
