2 cups cooked, mashed pumpkin

1 cup olive oil

3 cups sugar

3½ cups flour

4 eggs

2 tsp baking soda

½ tsp cinnamon

¼ tsp ginger

¼ tsp cloves

1 tsp salt

2 cups chopped nuts

½ cup water

1 cup raisins

2 cups candied or glace fruit, optional

 

Mix all ingredients. Bake in greased paper lined pans 1 hour at 350◦. I just use printer paper cut to fit the pans. Grease pan and then grease the paper as well. This lets you lift the bread right out of the pan. Cool completely before cutting.
