2½ cups flour

½ cup oat bran

1 cup + 2 tbsp whole wheat flour

2 tbsp wheat germ or cracked wheat

¼ cup dry milk

1½ tsp salt

1/4 cup brown sugar

1 tbsp yeast

2 tbsp oil

2¼ cups + 2 tbsp warm water

 

Mix 3 minute by mixer or by hand. Add water. Mix 2 more minutes. Dough will be sticky. Let rise covered 1 hour. Stir down dough with wooden spoon. Place in greased bread pan, pushing dough into corners. Cover and let rise to top of pan, about 45 minutes. Bake at 375◦ for 45 minutes. Lay piece of foil over top of pan and bake 10 minutes more. Remove from pan and cool on rack right side up. Makes one loaf.
