Adobo

2 lb beef, pork or chicken
1 clove garlic, minced
1/4 cup vinegar
1 tsp black peppercorns
1/2 bay leaf
2 tbsp soy sauce
pepper to taste
Pressure cook 20 minutes.
Remove from heat. Let pressure drop. Simmer without lid until moisture is nearly gone. Serve with steamed rice.
