Veal Cashew Casserole

This recipe is from a friend of Larry’s in Fort Morgan Colorado.

 

1 lb round steak cubed

½ cube butter

1 large onion, chopped

1 can cream of chicken soup

3/4 can water

1 can mushrooms and liquid

½ cup uncooked rice

 

Brown meat in butter. Add onion and cook until onions are limp. Combine all ingredients. Bake at 350 for one hour covered. Uncover and add 1/2 cup broken cashews on top. Bake 30 minutes more uncovered.
