Thai Fried Rice
Larry told me how this should
taste when he came home from Thailand and we came up with this recipe
1 egg
2 cups cooked rice
2 tbsp olive oil
½ cup chopped green onion
½ cup cooked diced meat (pork,
ham, chicken or bacon)
¼ cup parsley
1 tbsp soy sauce
1 tsp lime juice
Put egg in pan with hot olive
oil. Break yolk and fry hard. Drain on paper towel. Chop egg into small pieces. Mix all ingredients except soy and lime. Fry
a few minutes to get hot. Stir in soy sauce and lime juice just before serving.
