Zitti With Eggplant

 

1/2 large can Hunt’s Spaghetti sauce with

roasted garlic and onions

2 cups chopped canned tomatoes

12 Oz pkg of ziti pasta or penne rigatte pasta

1 medium eggplant cubed

1 medium chopped onion

1 clove garlic, minced

1/4 cup olive oil

1/2 tsp Basil

1 cup cottage cheese

1/2 cup mozzarella cheese grated

1/z cup parmesan cheese grated

 

Boil the pasta and drain. Mix the Hunt’s sauce and the chopped tomatoes to make a marinara sauce. Put a little bit of the marinara sauce in the bottom of a baking dish oiled with olive oil. Add most of the marinara sauce to the pasta in a skillet. Sauté the vegetables and the olive oil. Add to the pasta mixture along with the seasonings. Put 1/2 of the pasta mixture on top of the marinara sauce in the baking dish. Dollop the cottage cheese around on top of the pasta. Cover with the rest of the pasta. Mix the grated cheeses and cover the pasta with it. Bake at 350 for about 30 minutes or until cheese is melted and bubbly.
