Crab Cakes
1 # crab meat
1/4 cup chopped onion, celery and green pepper
1/4 cup mayonnaise
1/2 tsp salt
1/4 tsp black pepper
1 egg, beaten
2 dashes hot pepper sauce
2 cups bread crumbs
1/2 tsp worcestershire sauce
Mix all ingredients. Shape
into 4 patties. Fry in olive oil until browned and done on both sides. Drain on paper towels.
Serve with potato filling
on the side for a typical PA dinner.
Option: Use 1 pint kippered trout or canned fish for the crab meat.
