Gnocchi with Cheese by Helen Kraft

 

4 tbsp butter

1 cup milk

2 cups flour

3 eggs

1/2 tsp salt

1/8 tsp pepper

2 oz grated parmesan cheese

 

Melt butter in pan. Put in milk. Bring to a boil, add the flour and stir 6 minutes. Let cool. Work in the eggs one at a time. Beat well and add salt and pepper. Add cheese and knead dough. Roll dough out into a rope. Cut in 1/2” lengths and shape into tiny egg shapes. Bring a pot of water with about 3 qts water salted to a boil. Drop the gnocchi one at a time into the water and simmer about 10 minutes. Drain and serve with spaghetti type sauce and additional cheese.
